Let’s Shake Up the Supper Shuffle (Just a Little 😉)

Let’s be real, friend—most of us have a solid little rotation of dinners we lean on week after week. You know the ones: spaghetti night, taco night, chicken-something night, and maybe a breakfast-for-dinner when we’re feelin’ wild. And honestly? There’s nothing wrong with that! Familiar meals are comforting and easy, and they let us grocery shop on autopilot, which—let’s face it—is a small miracle some weeks.
But if you’re anything like me, sometimes you hit that “ugh, this again?” wall when standing over a pot of chili for the third time in two weeks. So today, I thought I’d invite you to try something new—but not hard. No scary ingredients, no hours in the kitchen. Just a cozy little recipe to tuck into your regular dinner rotation. Lets shake up supper!
So, what’s the dish? ✨ Creamy Tuscan White Bean Skillet ✨ It’s hearty, simple, pantry-friendly, and so dang good. Vegetarian (or add sausage if you want), loaded with flavor, and it comes together in one pan. Yes please.
🍲 Creamy Tuscan White Bean Skillet Supper
Ingredients:
2 tbsp olive oil
1 small yellow onion, diced
3 garlic cloves, minced
1 (15 oz) can diced tomatoes (with juices)
1 (15 oz) can white beans (like cannellini or great northern), drained and rinsed
2 cups baby spinach
1/2 cup heavy cream (or use coconut cream for dairy-free)
1/4 cup grated Parmesan (optional)
1/2 tsp dried thyme
Salt and pepper to taste
Crusty bread or rice for serving
Instructions:
Heat the olive oil in a large skillet over medium heat. Add diced onion and sauté until softened (about 5 minutes).
Stir in the garlic and cook for another minute, until fragrant.
Add the tomatoes, white beans, thyme, and a pinch of salt and pepper. Simmer for 5–7 minutes.
Stir in the spinach and cook until wilted.
Lower the heat and add the cream. Stir gently until heated through. If using, stir in Parmesan until melted and creamy.
Taste and adjust seasonings. Serve warm with crusty bread or over rice.
This dish is a hug in a bowl. Perfect for Meatless Monday, easy lunch leftovers, or that night you almost ordered takeout but remembered you’ve got beans in the pantry. 😄
